(1) If you are using Mail for Exchange (MFE), you just point it to whatever server supports the protocal. In the case of Google Sync, it will be google's servers.
(2) When Google Implements email over EAS (exchange activesync) it will be true push, this push is called Microsoft Direct Push. Current IMAP idle is pretty much "True push" as the emails will come through as the server gets them. Yes it will notify you instantly in both cases.
(3)I already explained this in my post. BIS IMAP implementation is halfassed because you only get emails, but in a half assed sort of way. True IMAP is a full syncronization of folders. If you delete an email on your IMAP device, it deletes it from the server, if you read the email on your imap device, it marks it as read on the server, time stamps are correct. BIS doesn't do any of that, as it is halfassed. Another stupid thing, if you dragged an old email from another folder into the inbox folder from you desktop client, it will show up on a blackberry as a new email with an incorrect timestamp, that is because BIS is halfassed.
